Scroll — we start grinding

It starts with a chickpea

Grind

Chickpeas soaked overnight, parsley, cilantro, dill, garlic and cumin. The blade spins — and the mix comes out green, coarse, fresh.

By hand, one by one

Roll

Ball after ball, between two palms. The tray fills up — and the oil is already waiting.

The moment it happens

Fry

The balls plunge, the oil roars around them — and the crust turns golden, craggy, crisp. Inside? Green and soft.

Crisp outsideGreen inside

Warm pita, hummus at the bottom

Stuff

Hummus, lettuce, tomato, cucumber, the hot falafel — and pink pickled turnip that lights it all up. Until it overflows.

The best part

Tahini & amba

A zigzag of tahini, a ribbon of amba — and we wait for the drip.

…the drip.

And then —

The first bite

The crust gives, tahini on your thumb, the square carries on. This is the moment you came to the Old City for.
